Stock is the most essential ingredient for soup – and I’m eating a lot of soup these days. And, since I’m really working hard on losing weight, I was looking for a vegetable stock. And, wow, did I ever find one!

Of course, I can’t really say that this is the World’s Greatest Vegetable Broth – I haven’t tried all of them. But I can say that it is excellent! And it’s not difficult to make. You end up with a lot of terribly over-cooked vegetables that are ok to sit down and eat by themselves – with a suitable dose of Tabasco sauce, of course.  But the stock then makes a really, really wonderful soup. I can’t recommend it too highly.
